Day 18 - Something New
New friends - In the last few months I have begun going to a local children's home to teach English 2 days a week. These sweet kids have stolen my heart and I look forward to each week with them.

Day 11 - Something Old
(This way not hard - we do live in Western Europe:)
Our sweet friends the Gereckes took us Coinimbriga, one of the oldest Roman settlements in Portugal. This is a picture of part of th actual road to Rome that still remains.

Day 6 - Books
Anyone who know me, knows I love to read, however books in English are hard to come by in Portugal. Andy got a Kindle for Christmas last year and I have taken it over. It is not the same as flipping pages through a real book, but I have really enjoyed it :)

Day 4 - Leaves
One of the things I miss most about East Tennessee is the changing of the leaves in the fall. The mountains are always ablaze with color. We don't get to see a lot of that hear:(

Day 3 Happiness
This one was a little difficult - It was hard to choose just one. However, this is a picture of the children at the children's home where I go 2 afternoons a week. I love the happiness on this young lady's face. Days like these one remind me of why we are here and I am HAPPYand blessed that I live in Portugal and serve such an amazing God.

Day 1 - Favorite food
My favorite food varies from time to time, but there is one little bakery in Porto that makes the best Bolo de Berlim. If I am anywhere in the area I will go out of my way to stop by. It is not Krispy Kreme, but when they are fresh I dare say it is just as good :)

Let Me Introduce You
Let me introduce you to Jennifer and Hannah. They are semester interns that are working with us until December. Pray for these young ladies as they adjust to a new culture and language, work with children at the children's home and spend time meeting the wonderful Portuguese people.

The first week of September we were excited to have a team from Hilldale BC in Clarksville, TN join us in Porto. They hosted 2 English workshops and had a lot of fun interacting with Portuguese of all ages.

Ethan has gotten quite creative in the last few days since we have been home a bit more. He built all these instuments with his Kynex set. Thankfully they don't make noise :)

Geres National Park
Last weekend we were invited by some friends at church to go to a lake in the Geres National Park. We were excited because we had been told that it was well worth the trip. We headed out about 9am on Saturady morning and after a 2 hour drive (all the way to the Spainish norther border) and a 30 minute hike down the mountain, we came upon a beautiful small lake. We all spent the day swimming, playing games and sharing a picnic. It was beautiful and reminded us of our beloved East TN. We will definitly visit again soon.

Trier, Germany
Each year we have a meeting with our colleagues in Western Europe. This year we all met in Trier, Germany (the oldest city in Germany). We had a great time with M friends and our friends from Paris, TN who came to take care of all the kiddos. The best suprise was when my mom walked in with the folks from TN!. It was a total suprise to us all - certainly a well kept secret. On the last day we had fun checking out the city sites with friends from Spain.

HOT ROLL MIX
I came across this recipe and it is so easy. I have made cinnamon rolls and doughnuts and they were so easy and good.
Hot Roll Mix – No Rise
1 tablespoon yeast
1/2 cup warm water
1 tablespoon sugar
1/2 cup oil
2 cups sour milk, buttermilk or yogurt
1/2 cup (or less) sugar
1/2 teaspoon baking soda
5 teaspoons baking powder
1 teaspoon salt
5 cups (or more) flour
Dissolve yeast in warm water with 1 tablespoon sugar. Add remaining ingredients. Mix and knead well. Place in greased container. Refrigerate. The dough will keep a couple of weeks. When needed, removed desired amount of dough and make into rolls. NO NEED TO RISE. Bake at 425°. This roll dough can be used in any recipe calling for Pillsbury Refrigerator Quick Crescent Dinner Rolls.
Rolls:
Shape as for regular yeast rolls.
Cinnamon Rolls:
Roll dough into rectangle. Spread with butter and sprinkle with cinnamon and sugar. Roll, slice and bake as individual rolls or put in pan with sides touching.
Bread Sticks:
Roll small amounts of dough in long strips about the size of your finger and 8" long. Put on cookie sheet. Brush with egg white. Sprinkle with sesame, poppy seeds or parmesan cheese. Bake at 400°.
Pizza Dough:
With greased hands, flatten dough to fit greased pizza pans. Bake 5 minutes (to keep sauce from making crust soggy). Fill as desired and bake.
Doughnut Holes:
Make small balls, drop in hot grease. Drain. Make glaze of icing sugar, boiling water, 1 teaspoon vanilla or maple flavoring. Let drip on rack.
Beignet style Doughnuts:
Roll out dough and cut squares with a pizza cutter. Drop in hot oil. Drain and toss in powdered sugar or cinnamon and sugar.

Intervalo - Taking a break
Intervalo means intermission or break in Portuguese. I know it has been a while since I posted anything, but I was taking a break while preparing for my language exam, getting the boys through the last month of school and their exams, our trip to Germany and a few other things. The break does NOT mean nothing has been going on. Below is a quick wrap up of our last few weeks of school, basketball, soccer, etc.

American Football In Portugal
American Football has taken root in Portugal. Andy was asked to help with a new team in Braga (about 30 minutes north of where we live). It is opening so many doors and he is loving it.

Mexican Dinner
Last weekend invited some university students over for a real Mexican Dinner. We had a blast and in the end one of the girls even gave a dance lesson to a few of the girls. It was so much fun!

Basketball / Soccer
On the weekend our lives seem to revolve a lot around soccer and basketball, among other things. Micah's team has finished their season after a crazy last game. Their team came in second, but they had already won their division and were playing in an older division. It has been a good season, but I think we are all ready for a break. |
Believe it or not they did not call this a foul - it was a jump ball. |
| Driving the lane |
| Ethan still has a few games, but then we have tournaments. Soccer NEVER stops here. |
That one got past him, but he looked good trying. |
